Pecorino Sardo Maturo DOP

Table cheese with mild, aromatic flavour, turns pleasantly spicy as it ages. The interior has a dense texture with a white paste in the young cheese, turning pale yellow once aged. Target market: Italy and worldwide.

it pairs well with medium-aged red wines; vinous, smooth, slightly fruity, with primary scents of tobacco and spices; dry, well structured, mid-range tannic and harmonious on the palate with a persistent finish.
